I had a can of tomato sauce that I accidentally opened so I was inspired to use it. I found this 50 Things to Make with Pasta Sauce page, and saw "Greek Beans" at #40. Their recipe looked a bit basic, so I used it as inspiration for my own rendition.
1/3 sweet onion, diced
2 stalks of celery, diced
1 tablespoon of Olive Oil
1 tablespoon of Butter
3 cloves of Garlic, finely chopped
1 tablespoon Penzey's Italian Herb Mix (or similar)
1 15 oz Can of White Kidney Beans, drained and rinsed well
8 oz Can of Tomato Sauce
1 tablespoon Red Wine Vinegar
Bay Leaf
Cinnamon Stick
Feta Cheese
